Hummus is one of those versatile dips that can support a wide range of variety.  The main bean in hummus is typically the garbanzo/chickpea but black beans, white beans, lentils and even edamame can be used for the main bean in this dip. 

The foundation of hummus typically consists of some lemon, tahini, and garlic.  From there – the ingredients added to hummus can vary tremendously:

  • oil or no oil
  • thick or thin
  • leafy greens such as kale, arugula, and even watercress
  • herbs such as parsley, basil and cilantro
  • spiciness from foods such as jalapenos, red pepper, and Sriracha
  • vegetables added such as beets, avocados, pumpkin and red bell pepper

Now I know I have left out many, many, many ingredients…such as green chiles.  Why not??  Green chiles pack a punch of flavor that spice up this hummus dip.   The cilantro and lime punch up the flavor even more. 

This hummus will end up being one that you make over and over because hummus is easy to make, it’s filled with flavor and it’s addictive.  What is better than that?

Green Chile Hummus

Ingredients

  • 1 can chickpeas
  • 1 can (7 oz.) diced green chiles
  • 1/4 c. tahini
  • 1 clove garlic
  • 3/4 c. cilantro
  • 2 tsp. fresh lime juice
  • 1 Tbs. fresh lemon juice
  • 1 Tbs. vegetable oil
  • Garnish options: cilantro and lime
  • Side options: homemade tortilla chips

Instructions

  1. Open the can of chickpeas and reserve the liquid from the can. Rinse the chickpeas and add the chickpeas to a blender.
  2. Open the diced green chiles and reserve 1 large heaping tablespoon of the green chiles. Add remaining green chiles to the blender.
  3. Add remaining ingredients to the blender and blend 30 seconds. Add 1-2 Tbs. liquid reserved from chickpeas to thin the hummus to your desired consistency. Blend 1 more minute or until blended to your preference.
  4. Remove hummus from blender and add to bowl. Add reserved green chiles to center of dip and garnish with cilantro and lime. Serve with tortilla chips or side of your choice.
